If he only wants ribeyes ans filets there is no reason to mess with whole cattle. He’d be much better off buying them whole and having them sliced like he wants.

If I offered it to my CrossFit neighbors I’m sure they would want to buy in to get some grass fed beef but I’d rather not open that door. After further research i don’t think it would be a wise purchase. Buying meat at the butcher counter seems to fit our needs better.

But I would still look around for a local, non-super mkt. butcher shop. We buy exactly what we want from the local guy including getting him to sell us bacon that we really like by the case.

I picked up a whole cow this year from a local grass fed farm. I got the custom cuts I wanted; Pichana and Trip tip and opted to leave the ribeyes whole as 2 roasts. As expected we have a shit ton of hamburger but overall it was a good deal. I have one on order for next year as well, suppose it will be our thing for awhile.

We raised our own cattle for years, hardly ever bought any beef from the store. Beef is 1000% better this way..

It may just be mental but I feel like this beef is substantially more filling than the store bought. I gave some of the ground beef to a few neighbors and they for lack of a better term thought it tasted Gamey but we haven’t picked up the same flavor. We did however eat some ribeyes from the freezer that we had left from Kroger and they tasted like shit in comparison. Whether or not its worth it depends on how many people youre feeding. When I had 4 kids in the house, we'd go through a beef per year. Now that Im older, my wife and I dont eat as much but the 18 yr old twins eat the world. Now, we go through a hog a year and skip the beef. I keep pork shoulder, some chops and put the rest into ground pork which Ive come to prefer over ground beef. Its easier to digest and I can end up with around 300 lbs of meat for around $400 post slaughter. For the money, the hog is better for us and its easier to digest. We make tacos, burgers, meatloaf, enchiladas, soups etc with the ground pork. An entire beef ends up pushing a couple thousand post slaughter and in the current market prolly ends up averaging a cost of $3.50 per lb which is a great price but its gonna be a LOT of meat and unless you have a lot of people in the house, its gonna take you 3 years to eat it. After 2 years, the meat flavor starts losing quality. I can pretty much answer any specific question anyone has about this as it used to be my primary source of income for years.
