I think he was in Texas in the late '80s, wore a hockey mask but used a ninja gimmick with nunchucks.  Pretty small for the era.  Who was he?

No, he was called The Boogeyman and wrestled for the USWA but in Texas, right before the GWF.

Doomsday was Glenn Jacobs, though. In between being the Fake Diesel and debuting as Kane. That was 1997. I've looked at Sportatorium results, and I can't see anyone with a similar name or gimmick to the one rossi is describing.
