I don't know shit about this kind of stuff. I want to watch YouTube, WWE Network, etc. I have a smart phone, but a non-smart tv, just a flat screen HDMI. Do I have to have a smart TV? Can I just use HDMI cable and a usb cable, with an adaptor? If so, what is the name of the adaptor? I'm not looking to go wireless.

Let's say that you have an iPhone - because that's what I know about.

On the iPhone, they make different adaptors that plug into the port where you power it from. I've seen adaptors that, at the highest price point (Apple Store) are $49. You plug the HDMI cable (sold separately) from the adaptor into an open port on your TV, and off you go. Simple shit.

I've also seen older style adaptors with the three RCA cables. What make those good is that if you want to feed it through your DVD recorder, you can actually record the stream to DVD if you want to keep the product. In saying that, I don't remember seeing this for the iPhone 5 and newer - I had one for my iPhone 4 and was recording some stuff to keep until I figured out how to do the same thing on my PS3 (which is now unable to do it due to the Youtube app changing).

Another thing you can do with an iPhone: Buy an older version of Apple TV off of eBay. You can then "cast" your iPhone video to the TV just by swiping it. By doing that, you can keep the Apple TV hooked up all the time, and you'd have the phone in your hand that you can search for more videos on.

Google Chromecast might be your easiest route:
https://store.google.com/us/product/chromecast?hl=en-US

It sticks into one of the HDMI inputs on your TV. WiFi and an app is required on your phone to set-up the Chromecast and then 'cast' things to your TV.

I've had one since October 2014 on my "old" (2011 model) TV and it's worked fine. Once installed and set-up, most video streaming services on your phone can cast. I've used it for Netflix, Hulu, WWE Network, MLB.tv, Tubi.tv, HBO GO, Showtime, YouTube, TNT and ESPN, among others.

if you have a smart TV just configure it with your WIFI, and then configure your phone to your WIFI and then youtube has an option to show on your TV if it is configured on your WIFI network then it will be easy as a sunday morning

This is what I am trying to do. I bought the adaptor but I still can't get it to work.

Yeah, I did everything right. Even made sure the HDMI ports were turned on. My only guess is that the saleswoman sold me the wrong, or a bad adapter since it literally has a reduced sticker on it because it was a return. I didn't see it until after I had it home. Frustrating shit.
