Here's one that I found through links off of BJ's Peter Miavia Ukelele thread.

Bret Hart Vs. Nick Bockwinkle

I was surprised when I came across a Ric Flair vs. Pat O'Connor match in St. Louis.  O'Connor looked about as bad by that point as Flair does now.

More than once, too.

Bockwinkel vs. Dr. D David Schults also happened more than once in Stampede.

Bockwinkel vs. Dundee happened a couple of times in Memphis in early 1980. Bock also had defenses against Sonny King and Jimmy Valiantin Memphis in 1978-79.

I believe Bock also defended against Adrian Adonis on a Georgia tour once, of all places.

Hulk Hogan vs. Abdullah the Butcher in early '80s NJPW.

British Bulldogs vs. The Fantastics in 1990 AJPW, to go along with their match with the R'nR Express in KC.  The Bulldogs also faced off with the Nasty Boys in one of the Tag Leagues in what had to be their only meeting.

Continuing the puroresu kick (since it's full of these types of matches) Wayne Ferris and J.J. Dillon both participated in some of the early '80s AJPW Champion Carnival round-robin tournaments.

Lots of Bob Backlund title defenses in Toronto: Gorilla Monsoon, Nick Bockwinkel, Baron Von Raschke, and The Destroyer.

The quintissential "only in WCW" match: Dirty White Boy Len Denton vs. Atlantis.

Some modern clash of styles matches that most don't know happened:

Dan Severn vs. Sabu

John Cena vs. Bryan Danielson

Mick Foley vs. Toshiaki Kawada

Kevin Nash/Scott Hall vs. Shinya Hashimoto/Naoya Ogawa

Sting/Steve Williams vs. Jushin Liger/Erik Watts (Williams and Liger on opposite sides of the ring would've made huge news in Japan and I'm pretty sure this is the only time it could've happened)

El Idolo de los Ninos was able to top the Grappler.

Bix's glorious Only in WCW Match Thread from DVDVR...

Masahiro Chono vs. Dave Sullivan (I literally LOL'd at that one)
Greg Valentine vs. Yuji Nagata
Ernest Miller vs. CIMA
Hacksaw Jim Duggan vs. Super Calo
Johnny B. Badd vs. Mustafa Saed
Ultimo Dragon vs. Bart Sawyer
El Dandy vs. Rick Fuller

The dramatic 1997 return of Rocky King(!!) to work various luchadores, followed a year later by the return of Skip Young to also work luchadores.

And so on, so forth...

The WWF was never nearly as fun in terms of bizarro matchups, but a sampling...

Genichiro Tenryu vs. The Brooklyn Brawler

Hulk Hogan & Koko B. Ware vs. Kamala & The Honky Tonk Man

Akira Maeda vs. George Steele (also Rene Goulet)

Tiger Mask vs. Eddie Gilbert (also Masa Saito)

The Cobra (George Takano) vs. Don Muraco

The one and only(?) meeting between the Rock 'n Roll Express and the Road Warriors

Apparently some '93 TV taping had Giant Gonzalez vs. Kamala.

Nope, Coliseum Video match at a TV taping.  Koko was subbing for Jake Roberts.

I'd like to add Giant Haystacks vs. Scott Riggs to that list.

I think  the Rock 'n' Roll Express and The Fantastics had a match on a tour of the Bahamas (or somewhere else tropical) in 1991-ish.

Somewhere on showapuroresu.com there was an action photo of Pat Patterson vs. Tommy Rich.  I've wracked my brain trying to figure out where and when that would have taken place (it couldn't have been Japan).

Wahoo vs. Beefcake is a good one...where was that?
