Not looking for a top ten list or anything like that, but what matches truly hold up over time in your eyes (you watch it and it is still great) and make you say "that was some of the best stuff ever"

Flair vs Funk- I quit 1989- awesome brutality with a great storyline

Chigusa Nagayo/Yuniko Hotta/Mika Suzuki/Yachiyo Hirata/Mika Takahashi vs Lioness Askua/Mike Komatsu/Kazue Nagahori/Mitsuko Nishiwaki/Etsuko Mita/Sachiko Nakamura- 12/5/87- fantastic match.

Steamboat + Youngblood vs Slaughter + Kernodle Cage match 3/12/83- great action with another great storyline

Dory/Terry Funk vs Stan Hansen/Terry Gordy - 8/31/83- enough said.

Just a few, I thought I would mention.

John

The Fantastics and Midnight Express had some classics in 1988.  Barry Windham and Dick Murdoch had two matches that I remember as being great- one was for the WWF in '84 (IIRC, the Spectrum) and another a few years later on UWF TV.

Hulk Hogan vs Iron Shiek  j/k

Actually it would have to be Ricky Steamboat vs Ric Flair when Steamboat defeated Flair for the NWA World title the first time

I'll go back to the 70s and come up to the current day.

Superstar Billy Graham vs Bruno Sammartino - Just any of their matches in all honesty, certainly not technical classics but great crowd involvement every time out

Bob Backlund vs Ken Patera - Their Texas Death match from MSG in 1980 still holds up.

Sgt Slaughter vs Pat Patterson - Went from a favorite to completely played out, but this was 1981 and I sit there and chant "ECW ECW ECW" when I watch this one. Referring to the famous MSG match and it is termed as a "Alley Fight" as opposed to a "Boot Camp Match"

Ric Flair vs Steamboat - Great stuff between these two in 1989.

Bret Hart vs Steve Austin - The Wrestlemania "I Quit" match is one of the greats.

Backlund-Patera series in 1980, especially 5/19/80 MSG.

Patterson/Slaughter series in 1981, and the 4/81 MSG match is also incredible.

Patterson/Backlund 9/14/79 MSG cage.

Also a personal favourite of mine and one of the few bouts I can re-watch any old time and enjoy it.

Funk V Flair in the I quit holds up real well.

I know it's kind of obvious, but Steamboat V Savage at WMIII was the greatest match of my youth.

Misawa vs. Kawada.  Their 3 title matches from Nov 92, July 93 and June 94 are the best trilogy of matches ever imo.

The Flair/Funk I quit could be my favorite. Those Midnight v. Fantastcs matches were great too. The best I saw live were a few Fantastics v. Sheepherders battles and the Flair v. Steamboat from the Rajun Cajun Clash.  A number of Barry Windham matches probably would fit in too.

That's why I love the Fantastics even though I generally didn't go for the teeny-bopper/ pretty boy stuff, and they pretty much ripped their gimmick off. They just worked so damn hard and were involved in as many great matches that I saw as anybody. Only Flair and Windham could probably compete, from what I saw.

The heat for the Hart Foundation vs Austin, Goldust, Shamrock & LOD from 10 years ago still makes that match sooo good.
